I can’t wait for summer. Sitting around a fireplace, toasting marshmallows only to place it on a chocolate bar thats sandwiched between two pieces of graham crackers. Biting into the sandwich to the crunch of the graham cracker, gooeyness of the marshmallow and then the melted chocolate. Oh my I love s’mores. But actually, in all my summers at camp, I only made them with marshmallows and graham crackers, I was not a chocolate fan. Oh boy, was I missing out!!! Chocolate is a key component in a s’more, and in these bars, the gooey brownie is the perfect substitute.
There’s a crunchy graham cracker crust, which personally, I can eat plain. I love graham crackers. Then a layer of fudge brownie, which is topped with puffy marshmallows toasted to perfect. But you have to keep your eye on those, because they can burn before you know it.
I made these for my sister, it was her birthday two days ago! Happy Birthday B!! Anyways, a few days before, she texted me simply asking what I am making for her Birthday Bash. After she realized that her friend could not transport a cake on the bus to work, we settled on these bars. Chocolatey (a main requirement) and portable, they also last a few days without losing flavor. Not that my sister would notice, when I visited during my December break, she still had Icebox S’mores Bars in her fridge from Thanksgiving. Um ew? I threw those out immediately!

But back to the bars, you mix melted butter, graham cracker and a few tablespoons of sugar and then press it into a 9 x 9 (or 8 x 8) pan. While that is baking it for a couple of minutes, the brownie layer is made with butter and chocolate melted in a double boiler. Then sugar, eggs and flour is added.
Then, the brownie layer is baked without marshmallows. Once the brownies are done and cooled, top them with marshmallow halves (sticky side down) and then place under the broiler until toasty. I made the mistake of cutting the marshmallows and then leaving them out while the brownies cooled, so the sticky side was well no longer sticky and once they came out of the broiler and I went to cut them, the marshmallows fell off. So, I recut some and redid the topping. But don’t worry, the extra marshmallows were devoured by my family and I. They tasted amazing! How often do you get a perfectly toasted marshmallow in a regular campfire.
They were a bit difficult to cut, but worth the effort, they tasted amazing! Plus, you get to eat all the “scraps”
S’more’s Brownie Bars
For the crust:
1.5 cups graham cracker crumbs
6 tablespoons unsalted butter; melted
2 tablespoons sugar
For the brownie layer:
8 tablespoons unsalted butter
4 ounces unsweetened chocolate
1 1/4 cups sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 eggs
1/2 cup all-purpose flour
For the topping:
20 large marshmallows; cut in half
Directions
1. Preheat oven to 350 degrees. Line an 8-inch-square metal baking pan with foil and spray lightly with nonstick cooking spray.
2. Combine the graham cracker crumbs, 6 tablespoons of melted butter in a bowl and mix until the crumbs are moistened. Press the crumbs evenly into the bottom of the pan and bake at 350 degrees for 7 minutes. Allow crust to cool on wire rack.
3. Turn the oven temperature up to 400 degrees and prepare the brownie layer.
4. In top of a double boiler set over barely simmering water, or on low power in a microwave, melt butter and chocolate together. Stir often, and remove from heat when a few lumps remain. Stir until smooth.
5. Stir in sugar, vanilla and salt. Stir in eggs one at a time, followed by flour. Stir until very smooth, about 1 minute, until mixture pulls away from sides of bowl. Scrape batter into prepared pan and bake for 18 minutes.
6. Let cool completely, then lift out using the foil and place brownies onto a broiler safe pan. Move your oven rack about 6 inches from your broiler and preheat your broiler to low.
7. Layer marshmallows (sticky side down) across the top and toast under the broiler until golden, about 2 minutes. Make sure you watch these, they will burn quickly! Cool and cut into 16 (two inch) squares.
